Fuzzy’s Fresh Whole Ham

The following recipe is a demonstration on how to prepare my Fresh Whole Ham on a Big Green Egg.

Fair Warning: This Ham won’t taste like your store-bought or Honey-Baked Sweet and Salty ham. Fresh ham has the texture and taste of Pork Tenderloin. My recipe simply introduces a hint of that smokey sweetness that ham lovers know and love.

Ingredients:

1 Fresh Whole Ham
1 Large Aluminum Roasting Pan
1 Gallon of Apple Juice
1 Bottle of Maple Syrup
Honey
1 box of Brown Sugar
Cinnamon
Allspice
Nutmeg
Apple Wood Chips

Pairs With: If you’re still craving that sweet meat… you drizzle some honey and/or maple syrup on your sliced ham.

Fuzzy’s Whole Fresh Ham

Method Of Cooking:

Big Green Egg (other smoker or grill) on the V-Rack placed on the grill grate… over an aluminum roaster (as your drip pan)…which is placed on the plate setter…which is directly on the coals (no fire ring). Fill your aluminum roaster with Apple Juice. Large amount of Natural Lump Charcoal at 205-250 degrees for 30-45 minutes per pound…until the internal temperature reaches 170-180 degrees. (cook times will vary based on Egg temperature and Ham size).

Total Cook/Prep Time: 24:20:00…20 minutes of prep, 12 hours to brine, 9-12 hours for cooking (or 170-180 internal temperature) …you should be able to watch 3 seasons of the Walking Dead.

Feeds: 20 lumberjacks, 27 “growing boys”, or 35 people.

Go with a half ham for a family dinner.

Leftovers? Refrigerate ham and make ham and cheese sliders in your toaster oven. This ham is also phenomenal with eggs and a biscuit in the morning.
